Detection Principle | Sucrose synthase-I (SS- I) catalyzes the substrate reaction to generate reducing sugar. The reducing sugar can show color changes when reacting with the chromogenic agent. There is a characteristic absorption peak at 540 nm. The activity of the enzyme is directly proportional to the absorbance. |
